Free Low Carb Recipe #1

Tequila-Marinated Hot Chicken Wings

  • 3 pounds chicken wings, about 21 to 22 wings, separated at the joints, wing tips discarded

  • 1/2 cup tequila

  • 1/2 cup chopped fresh cilantro

  • 1/4 cup fresh orange juice

  • 1/4 cup fresh lime juice

  • 1/2 tablespoon cracked fresh pepper

  • 3 large cloves garlic, minced

  • 1 to 2 teaspoons Tabasco sauce, or to taste

  • 1 teaspoon grated orange zest (this is finely grated orange peel)

  • 1 teaspoon grated lime zest (this is finely grated lime peel)

  • For Garnish:

  • 2 long strips orange zest, curled into spirals for garnish

  • 2 fresh limes, cut into wedges for garnish

  • fresh cilantro sprigs for garnish

  • Rinse chicken wings and pat dry with paper towels.

    Place wings in a zip lock bag. In a bowl, combine remaining ingredients except for garnish. Pour mixture over the chicken wings. Cover and refrigerate overnight, turning the bag several times.

    Preheat oven to 350°F.
    Remove chicken wings from marinade and arrange in a large shallow roasting pan.

    Unbaked Chocolate Peanut Butter Oatmeal Cookies

    • 1 cup I Can’t Believe Its Not Butter

    • 2 cups Splenda

    • ½ cup whipping cream

    • ¾ cup chunky peanut butter (Only fresh from the Deli, no jars!)

    • 3 cups oatmeal

    • 6 tbsp powdered cocoa

    • 1 tsp vanilla

    Place the butter, sugar and cream in a saucepan and bring to a boil over high heat; stirring.

    At first the Splenda will clump but just keep stirring, it will smooth out.

    Boil one minute, stirring constantly. Remove from heat and add peanut butter, oatmeal and cocoa, then the vanilla. Stir well and drop by rounded teaspoonfuls on waxed paper-lined cookie sheets. Refrigerate until set. Store in airtight container in refrigerator. Makes about 40.

    Note: This is a second and third phase recipe. It is critical that you use the correct peanut butter. You want fresh ground from the deli as it is pure peanuts and nothing else. You can also make peanut butter at home in your food processor with dry roasted peanuts and a little safflower oil. All peanut butter sold in jars is loaded with carbs in the form of sugar.

    Oatmeal… use only the Old fashioned real oatmeal. No Quick, no instant. This ensures that you get the whole grain, not the stuff where the good fiber has been milled away so that it cooks quicker.
